Meaty Quesadillas

Because we had such long flights to and from the states, I loaded up on magazines to read on the plane.

One was the May 2010 Food Network Magazine. Today, I made the "Meaty Quesadillas" on page 74.

This was pretty good and very quick and easy. It probably won't show up on our menu again anytime soon because I really need to use up what we have on hand and not buy anything new. With basically just 3 months left in Okinawa, that's going to mean we will be having some creative items for dinner.

I also made the some homemade salsa. I used a can of petite diced tomatoes, about 4 green chili peppers, a few of the green parts from the scallions used in the quesadillas, half a lime, a pinch of both sugar and salt and a clove of garlic.

And just because this is Buddy's blog, here is a typical picture of him--sleeping. He has a rough life.
